We typically stick to painting and burning wood signs rather than carving, but have had a few people ask about carving wood signs.  The below video does a great job of explaining how to carve wood signs.  It looks very similar to wood burning:  you need to be patient and very particular.  In the end, it turns out to be a great project, and they do a good job of explaining how to take a piece of wood and turn it into a sign.  It’s not a wood burned sign, but it’s still a cool piece!
